Laai: The Puffed Rice Sweet from Gaya
Gaya, a city known for its spiritual significance with events like Pitru Paksha Mela, is also famous for its unique sweets. Alongside Tilkut, another local specialty is Laai. This simple yet delicious sweet is made from puffed rice, known locally as 'murmura' or 'bhuja'. For more on local snacks, see Muri-Bhuja. The city is also home to the Vishnupad Temple.,The preparation involves mixing the puffed rice with hot, molten jaggery (gud). Sometimes, khoya (reduced milk solids) is also added to make it richer. The mixture is then quickly shaped into balls or flat discs before it cools and hardens.,The result is a light, crispy, and crunchy sweet with the earthy sweetness of jaggery. Laai is a popular snack, especially during the winter months and on festivals like Makar Sankranti. It's a perfect example of how simple, local ingredients can be transformed into a delightful treat.
