Tilkut: The Sesame Delicacy of Gaya
Tilkut is a traditional sweet that is synonymous with the city of Gaya in Bihar. This unique confection is made from just two main ingredients: roasted sesame seeds (til) and jaggery (gud) or sugar. The process, however, requires immense skill. It is a key part of the Makar Sankranti festival. The city is also famous for the Mahabodhi Temple. The sesame seeds are pounded and mixed with hot, molten jaggery. The mixture is then expertly beaten and stretched into thin, brittle sheets or shaped into small cakes. The result is a crispy, flaky sweet with a nutty, earthy flavor that is incredibly delicious. It is primarily a winter delicacy, as both sesame and jaggery are believed to provide warmth to the body. Tilkut is an essential part of the Makar Sankranti festival celebrations in Bihar. The artisans of Gaya have perfected this craft over generations, and their Tilkut is famous across the country. It's a simple sweet that represents a rich culinary tradition, much like the city's other specialty, Laai.
