Laung-Latta: The Clove-Kissed Sweet Pastry
Laung-Latta, also known as Lavang Latika, is a classic sweet from Bihar that is often prepared during festivals like Holi and Diwali. It is a small, pocket-like pastry made from all-purpose flour dough. It is a staple of Bihari Cuisine.,The pastry is filled with a rich mixture of khoya (reduced milk solids), grated coconut, and chopped nuts. It is then folded into a neat parcel and sealed with a single clove ('laung'), which gives the sweet its name and a unique, subtle aroma. These parcels are deep-fried in ghee until golden and crispy.,After frying, the hot pastries are dipped into a warm sugar syrup, allowing them to soak up the sweetness. The result is a delightful sweet that is crispy on the outside, soft and rich on the inside, with a fragrant hint of clove. It's a true festive indulgence, similar to Chandrakala.
