Pantua: The Elongated Cousin of Gulab Jamun
Pantua is a traditional sweet from Eastern India that is also very popular in Bihar. While it shares its core ingredients with Gulab Jamun, there are subtle differences that give it a unique identity. Pantua is typically made from a mixture of chenna (fresh curd cheese), khoya (milk solids), and flour. For another variation, see Kala Jamun. It is a popular part of Bihari Cuisine.,This dough is shaped into balls or, more characteristically in Bihar, into small cylinders. These are then deep-fried in ghee or oil until they achieve a rich, dark brown color. The fried dumplings are then soaked in a warm, fragrant sugar syrup, often flavored with cardamom or rose water.,Compared to Gulab Jamun, Pantua can have a slightly firmer texture and a richer taste due to the addition of chenna. It's a beloved dessert served during festivals, weddings, and other special occasions, representing the sweet hospitality of Bihar, often served alongside other sweets like Laung-Latta.
