Litti Chokha: The Soul Food of Bihar
Litti Chokha is more than just a dish; it's an identity for Bihar. This rustic delicacy consists of 'Litti', which are whole wheat balls stuffed with a savory mixture of roasted gram flour (Sattu), herbs, and spices. These are traditionally roasted over a coal or cow-dung fire, which imparts a unique smoky flavor. It is the star of Bihari Cuisine. Another popular stuffed bread is the Sattu Paratha. The Litti is served dipped in generous amounts of desi ghee, alongside 'Chokha'. Chokha is a flavorful mash of roasted eggplant (baingan), tomatoes, and boiled potatoes, mixed with chopped onions, garlic, green chilies, and mustard oil. A simpler version, Aloo Chokha, is also a staple. Originally a staple food for farmers and travelers due to its long shelf life and simple preparation, Litti Chokha has now found its place in restaurants and food festivals across the world, proudly representing the robust and wholesome flavors of Bihar.
