Champaran Mutton Tash: A Spicy Delight
While Champaran is famous for its Ahuna Mutton cooked in an earthen pot, another local delicacy that deserves equal praise is Mutton Tash. 'Tash' refers to the sound of meat sizzling on a hot pan (tawa). It's a spicy, dry-fried mutton dish that serves as a perfect appetizer or side dish. The region is part of the larger East Champaran district, birthplace of author George Orwell.,The preparation involves marinating small, boneless pieces of mutton in a fiery blend of spices, including red chili, ginger-garlic paste, and garam masala. The marinated meat is then pan-fried on high heat until it is well-browned, crispy on the outside, and tender on the inside.,The intense, smoky flavor and the spicy kick make Mutton Tash an incredibly addictive dish. It is often served with a side of puffed rice (Muri-Bhuja) and a simple salad of onions and green chilies. For any meat lover visiting the Champaran region, trying the local Tash is an absolute must.
