Rasia: The Jaggery Kheer of Chhath Puja

Rasia is a traditional Bihari rice pudding that holds immense significance during the Chhath Puja festival. Unlike regular kheer which is made with sugar, Rasia is sweetened with jaggery (gud), which gives it a distinct earthy flavor and a beautiful golden-brown color. It is one of the key foods of the festival, alongside Thekua. Another popular kheer is the Makhana Kheer.,This dish is a key component of the 'Kharna' ritual, which takes place on the second day of Chhath. The person observing the fast prepares Rasia along with small rotis (chapatis) as an offering to the deities.
