Bihari Style Mutton Curry: A Rustic and Robust Feast
Bihari Mutton Curry is a classic dish, known for its simple preparation and robust, rustic flavors. Unlike many other mutton curries, it doesn't rely on a paste of ground onions or tomatoes. Instead, it uses a large quantity of sliced onions, which are slow-cooked with the mutton until they melt into a thick, rich gravy. For a different style, check out Ahuna Mutton. It is a star of the non-vegetarian side of Bihari Cuisine.,The process begins by sautéing whole spices like cinnamon, cardamom, and cloves in mustard oil. The mutton and sliced onions are then added and cooked together ('bhuna') for a long time. This slow cooking process is key to developing the deep, caramelized flavor of the onions and making the meat fall-off-the-bone tender.,A paste of ginger, garlic, and chilies, along with powdered spices, is added later. The curry is typically cooked in a pressure cooker to speed up the process, but the traditional method involves slow cooking in a heavy-bottomed pot. Served with hot rice or rotis, this dish is a true feast for the senses, often enjoyed with a side of Aloo Chokha.
